Moimoi is one of West Africa's most loved dishes. It is a steamed bean pudding made from black-eyed peas, peppers, and onions, served as a side, a snack, or the quiet centrepiece of a proper Nigerian spread.
Moimoi is endlessly versatile — eat it warm or at room temperature; serve it alongside rice, stew, pap (maize porridge), oatmeal, or bread, or enjoy it on its own. Tuck in a boiled egg, some fish, or corned beef before steaming, and it becomes something else entirely.
Traditionally, making it from scratch means soaking dried beans, peeling off every skin by hand, and blending everything smooth before you even start cooking. It's a labour of love — and most people don't have the time.

How to make it
Mix 100g of powder with 250–300ml of water. Whisk or blend until smooth, then leave to rest for 15–30 minutes. Add your extras — boiled egg, fish, a little oil, seasoning — spoon into your containers and steam until set and cooked. Soft, fluffy, and full of flavour.
